Description

Made from whole-grain, Dark Northern rye berries and milled locally at Camas Country Mill.

Rye is a grass grown extensively as a grain (not to be confused with ryegrass, which is used for lawns, pasture, and hay for livestock), closely related to barley and wheat.

Since the Middle Ages people have cultivated rye in Central and Eastern Europe. It serves as the main bread cereal in most areas east of the French-German border and north of Hungary.

This is a whole grain flour that is ideal for making hearty breads and sourdoughs. Heavier and darker than most flours, rye flour produces dark, dense loaves. It is often paired with the flavor of caraway as in pumpernickel bread, our Dark Northern Rye Flour also makes surprisingly sweet butter cookies and is a wonderful addition to lighter whole grain flours in baked goods and breads.
