Our Organic Roasted & Salted Split Shell Pistachios are from a farm in California which has specialized in growing and handling pistachios since 1976. The farm has been family owned and operated for four generations.
Pistachios split naturally on the tree; they are harvested that way! Within 18 hours after harvest, the pistachios are dipped in water and then dried at 180 degrees F for 4-5 hours to bring the moisture level down to 3-4%. The nuts are then salted and roasted at 325 degrees F for 30 minutes.
