This flour is made from a blend of Hard Red Spring Wheat. Refined by having the bran extracted, it is not considered a whole wheat flour, and is the closest flour we have to an all-purpose flour.

Protein level is a minimum of 12.5%.

This Organic flour is a top-grade, high protein, high gluten, unbleached, white flour for baking and provides a nice rise to the finished product - great for bread!
