Description
Our Organic Spelt Berries are grown in Washington.
Spelt is an ancient farro grain (Mediterranean term for original cereal grains) that predates wheat. The Romans grew and expanded spelt cultivation as far north as Britain. German-speaking people made spelt their "Korn", their most important bread grains, until the late 1800s.
Elwha River Hulless Spelt was first developed by Washington State University’s plant breeder, Kevin Murphy. The name commemorates the dam removal projects that prioritized habitat and salmon restoration on the Olympic Peninsula river.
Hummingbird began growing this Winter Spelt in 2017 when James Henderson, our Senior Farm Liaison, collaborated with Murphy to bring the crop to market.
Since 2017, Hummingbird has worked with farmers in different growing regions of the Pacific Northwest to better understand where this crop thrives and to reduce the risk of climate change impacts on yields.
Gold in color with a nutty and slightly sweet flavor, spelt is high in protein and nutrients. Due to its particular gluten, spelt tends to be easier to digest.
A whole-grain delicious in stews, as the main ingredient in grain salads, cooked as a breakfast porridge, when ground into flour it is used in many breads, or enjoyed as a side dish.
