Our Organic Pistachio Kernels are from a family farm in California's San Joaquin Valley. They first started selling Pistachios when the National Organic Program began.

Most pistachios split naturally on the tree, and are harvested that way. The ones that do not split get shelled to make the kernels.

Within 18 hours after harvest, the pistachios are shelled, dipped in water and then dried at 180 °F for 4-5 hours to bring the moisture level down to 3-4%. The nuts themselves do not reach that temperature due to the moisture wicking off, but there are no definitive studies to say what temperature the nuts reach.

A note from the farm:

"We have 560 acres of organic pistachios. We are the only organic farm that hulls their pistachios immediately after harvest, a strategy that results in virtually no staining of the shells."
