Our Organic Pistachio Kernels are from a farm in California which has specialized in growing and handling pistachios since 1976. The farm has been family owned and operated for four generations.
Most pistachios split naturally on the tree, and are harvested that way. The ones that do not split get shelled to make the kernels.
Within 18 hours after harvest, the pistachios are shelled, dipped in water and then dried at 180 °F for 4-5 hours to bring the moisture level down to 3-4%. The nuts themselves do not reach that temperature due to the moisture wicking off, but there are no definitive studies to say what temperature the nuts reach.
