Curry Roasted Pistachios

Our Pistachios are organically grown in California's San Joaquin Valley. Culinarily Pistachios are called nuts, but botanically they are seeds. They are made of 20% protein and are also among the lowest calorie nuts. Pistachios are rich in many nutrients and may support weight loss, gut health, blood sugar control, and heart health1.

They are so delicious and easy to eat. You can use them almost anywhere, such as, to top a salad, as a pizza topping, in pesto, as the primary element in gelato or ice cream, granola, dessert crust, and of course as a snack.

Here we season the Pistachios with curry seasoning and roast them gently to create a perfect treat with your charcuterie board or with a favorite beverage. 


INGREDIENTS

 2 cups of Pistachios, raw (Organic Pistachios, Organic Pistachio Split Shells )

 1-1/2 Tbsp Maple Syrup

1-1/2 Tbsp Extra Virgin Unrefined Coconut Oil

 1-1/2 Tbsp fresh Lime juice

 1  Tbsp Curry Powder

 1/2 tsp Coriander

 1/2 tsp Himalayan Pink Salt

 zest from 1 lime

 

INSTRUCTIONS

  1. Preheat your oven to 300° F and prepare a baking tray with parchment paper.
  2. Combine and stir together Maple Syrup, Coconut Oil, Lime juice and spices, gently warming to liquify the coconut oil.
  3. Add the Pistachios to the seasoning, and stir to coat fully.
  4. Pull out the coated Pistachios and spread them on parchment and bake for 25 min, checking and remixing in the middle.
  5. Pull out the nuts and let cool for half an hour. They are still roasting until they are cool.
  6. Once cool, store them in an airtight container for 3 weeks.
