A Taste of the High Desert: In New Mexico, pecans thrive in the unique desert climate, which imparts a distinctively rich, sweet, and buttery flavor. The trees begin to bloom in mid-to-late spring, usually around April and May. This is a crucial time when wind pollinates the trees. After pollination, the nuts spend the hot summer months, June–September, growing and developing their shells and kernels. The first hard freeze, usually in November naturally defoliates the trees, making the leaves drop and helps the pecan shucks, or outer husks, dry out and split open. Once the shucks split, the nuts are shaken from the trees and collected. This makes the new harvest hit the market in time for the holidays or early in the new year.

What is Awakened?
The Awakening process involves soaking the pecans, which activates enzymes and leads to several nutritional and digestive advantages:

Maple Honey Awakened Pecan Pie
Dough for a 9-inch single crust pie, plus flour, for rolling out
½ c Organic unsalted butter
¼ c Organic Dark & Strong Maple Syrup
¼ c Meadowfoam Honey
1 c Organic Brown Sugar
3 large Organic eggs, room temperature
2 t vanilla extract
½ t Himalayan Pink Salt
1½ c Awakened® Pecans

Step 1
On a lightly floured surface, roll dough into a 12-inch circle, and transfer to a 9-inch metal pie pan. Fold over any excess dough, crimping the edges. Place crust in the refrigerator for 30 minutes or up to 24 hours.
Step 2
When ready to bake, place a baking sheet on the middle oven rack and heat oven to 425° F.
Step 3
Using a small saucepan, melt the butter over medium heat. Cook, stirring occasionally, until the foam subsides, the milk solids turn golden brown and the butter smells nutty and toasty, about 5 minutes. Add maple syrup to the pan and continue to stir occasionally, until the mixture thickens and reduces slightly, about 2 more minutes. Remove from heat, and whisk honey into the warm syrup mixture and cool for 10 minutes.
Step 4
While the syrup mixture cools, combine sugars, eggs, vanilla and salt in a large mixing bowl. Gradually pour the cooled syrup mixture into the egg mixture, stirring constantly.
Step 5
Remove chilled pie crust from refrigerator and place pecans in crust. Carefully pour the filling over the pecans. Place pie pan on the hot sheet pan and bake for 10 minutes. Then, reduce heat to 350° F and continue to bake for another 35 to 45 minutes, or until the center of the pie puffs and turns golden amber. Remove from oven, sprinkle with pinch of pink salt and set pie on cooling rack for at least 2 hours before serving.
