This is our "Go to" Salad for both Holiday dinners as well as workday lunches, some say it is magical. It is easy to prepare, substitute as needed with what you have on hand. The highlighted items are available through Hummingbird.
6 cups organic mixed greens
1 organic honeycrisp apple, thinly sliced
1/2 cup Awakened® Pecans
1/2 cup Dried Organic Tart Cherries
1/3 cup crumbled goat cheese
Lemon Maple Vinaigrette
1/4 cup Organic California Olive Oil
1/4 cup Organic Apple Cider Vinegar
1 organic lemon, juiced and zested
2 tablespoon Organic Maple Syrup
1 tablespoon Organic Poppy Seeds
1) To make the vinaigrette, whisk together olive oil, apple cider vinegar, lemon juice, lemon zest, maple syrup and poppy seeds in a small bowl; set aside.
2) To assemble the salad, place mixed greens in a large bowl; top with apple, pecans, cranberries and goat cheese. Pour the dressing on top of the salad and gently toss to combine.
3) Serve immediately.
