Organic Red Fife Wheat Flour made with Red Fife Wheat grown in Myrtle Creek, OR and stone ground at Camas Country Mill in Eugene.

Red Fife is a Canadian heritage (heirloom) wheat variety which was North America’s preferred bread wheat in the 19th century, fathering many modern red wheat varieties. As whole grain bread flour, Red Fife is unparalleled. It has a profoundly herbaceous and nutty fresh wheat flavor. Bread made from Red Fife produces a moist, satisfying crumb and a lovely crust with deep toasty caramel notes.

Squarely in the 12% protein range, with all the loft of white flour and richness of whole wheat flour, this flour is stone-ground in small batches to retain optimal freshness. The slow milling process does not heat the grain or flour, so the nutritional benefits of the Hard Red Fife Wheat remain intact.

As with all whole grain flours, our Red Fife Wheat Flour is best stored in the freezer or refrigerator until ready to use.

"Red Fife elicits a response from bakers unlike almost anything else--there's gesticulation, wide eyes, excited claims of 'caramel notes'.

"In the mid 1800s, a Scottish immigrant named David Fife planted wheat seed from the old country on his Ontario acreage. Keen on securing seed that would survive the rough Canadian winters, Fife reached back to contacts in Glasgow who sent seed from Eastern Europe. The seed had already crossed many borders by the time it reached North America, tucked in cargo across the Baltic and North Seas from the port of Danzig to the port of Glasgow.

"This remarkable grain that moved like prairie fire across Canada and the northern United States is now recognized as a descendant of Ukrainian Halychanka wheat, a hearty, leggy wheat with a long history in Ukrainian folklore. What became Red Fife was likely a hybrid of this Halychanka wheat and a Canadian wheat or other variety present in the mixed-seed bag David Fife received from Glasgow."
