This Organic, Multi-Purpose Hard White Wheat is grown regionally and slow-milled in small batches in Eugene. This helps retain optimal freshness. The slow milling process does not heat the grain or flour, so the nutritional benefits of the Hard White Wheat remain intact. 

Great as an all-purpose flour for all your baking needs with protein between 9-12%.
