Our Organic Heirloom Orca Beans are grown on a family farm in Myrtle Creek, Oregon. Farmers Del and Angela Blanchard are third generation Oregon farmers who have been farming on and off for the past 40 years. Their Certified Organic 30 acre farm rotates growing beans, wheat, barley and red fife.
Orca beans, also known as calypso or yin yang beans, are a small heirloom bean that is black and white in color. They are high in protein, iron, fiber, antioxidants, magnesium, and potassium.
Orca beans have a creamy texture and potato-like taste. They are a hearty addition to soup, salads, side dishes and casseroles.
Cooking Directions: Rinse and sort through beans; soak overnight in cold water. Drain and cover with water by 4 inches. Bring to a boil. Reduce heat to simmer and begin checking for softness at 45-60 minutes.
