Delicate and rosy-colored, pink beans have a refined texture and mild, sweet flavor.

A very nutritious bean, pink beans are high in protein and a good source of potassium, phosphorous, magnesium, iron, and calcium.

Popular in casseroles and soups, pink beans are also delicious served as a savory salad combined with aromatic herbs. Since pink beans can really hold spices, they are great in Mexican dishes such as homemade refried beans.

Cooking Directions: Rinse and sort through beans; soak overnight in cold water. Drain; in pot add beans and cover with water by 4 inches. Add kombu seaweed if desired (optional; helps with digestibility). Bring to a boil. Reduce heat to simmer and begin checking for softness at 15-20 minutes.
