Blueberry honey has a light blueberry flavor, with subtle hints of toasted marshmallow and vanilla.
Our Blueberry Honey comes from farms located in the Willamette Valley. The Willamette Valley is home to dozens of blueberry farms with many varieties to choose from, including: Lowbush, Highbush, Brigatta, Chandler, Chippewa, Northsky, Top-Hat, Darrow, Duke, Liberty, Rubel, Spartian, Toro, Emarald, Legacy, Misty, Star, and Sunshine Blue.
In Western Oregon, blueberries bloom for about four weeks in May. Worker bees gather pollen and nectar for the hive. By a process called ‘ripening,’ the moisture content of the nectar is reduced, changing the nectar’s sugar into honey sugars (glucose, fructose and maltose) which are then sealed with beeswax into honeycomb cells. The honey is just about ready when the blueberries are ready to pick; somewhere between early June and late July.
Honey is harvested at different times during the year and extracted by a number of different means. Our Blueberry Honey is harvested through a radial extraction process at the end of summer. An uncapping knife is used to expose the honey cells and individual frames are placed in the extractor one by one. The extractor is a device that spins the honey from the cells into a holding tank. After the honey spins for five to ten minutes, it is pumped through a wax separator and poured into 55 gallon drums. The temperature of the process never reaches above beehive temperatures.

Honey will naturally crystallize over time, which does not diminish the quality or flavor. If desired, you may heat gently in a warm water bath to liquefy.
Unfiltered and raw (not heated over 115 ˚F) our honey still contains traces of pollen and propolis, and has no additives.
