These petite, ruby red Adzuki beans have a nutty, sweet flavor.

Adzuki beans are loaded with protein and soluble fiber. They also have significant amounts of iron, potassium, folate and magnesium and are easy to digest in comparison to other legumes.

Adzuki beans are superb in savory dishes with rice and other grains and veggies. Or, try in soups and stews. In East Asian cuisine, Adzuki beans are often used as a core ingredient in sweet desserts.

To cook: soak overnight, rinse beans, and cook until soft.
