Flour, Corn, Roy's Calais
Roy’s Calais Flint Corn is a yellow and burgundy heirloom variety, grown by a farm in Idaho. The corn is harvested, shelled and dried on the farm. The heirloom corn is cleaned at a facility close to the farm in Idaho, and milled into flour at Camas Country Mill in Eugene, Oregon.
Roy’s Calais is an open-pollinated flint corn originally cultivated by the western Abenaki (Sokoki) tribe in Vermont. The seed was saved by local farmers of the area and then passed to a seed collector (who selected seeds based on their outstanding performance in organic conditions) who crossed the inbred strains and grew out the variety.
Our Heirloom Corn Flour is finely ground with a rich, buttery flavor that is a lovely addition in breads, muffins and cakes.
