Polenta, Corn, Roy's Calais
Roy’s Calais Flint Corn is a yellow and burgundy heirloom variety grown by a farm in Idaho. The corn is harvested, shelled and dried on the farm. The heirloom corn is cleaned at a facility close to the farm in Idaho, and milled into polenta at Camas Country Mill in Eugene, Oregon.
Roy’s Calais is an open-pollinated flint corn originally cultivated by the western Abenaki (Sokoki) tribe in Vermont. The seed was saved by local farmers of the area and then passed to a seed collector (who selects seeds based on their outstanding performance in organic conditions) who crossed the inbred strains and grew out the variety.
With a rich, buttery flavor, polenta can also be used interchangeably with grits, and is an excellent base for hearty meat and vegetable dishes.
